
1. Sesame dressing preparation
After coarsely grinding the sesame seeds in a mortar, add
the other ingredients of the dressing in the proportions specified above. If
it's not bothersome for you, in order to extract a sweet aroma from the sesame
seeds, slightly fry them in a saucepan prior to grinding.
2. Cutting the ingredients for the topping
Cut the myoga ginger into two halves, and further slice it
into fine stripes. After slicing, wash the stripes once, and then thoroughly
dry them. Needle cut the ginger in a similar manner. The key point of needle-cutting
the ginger is to pile up ginger slices, and cutting them again little by little. All
the time keep in mind that the slicing should be very fine.
3. Dressing the boiled vegetables
Pay attention to how you boil the vegetables. You cannot
dress over-cooked vegetables with a delicious sesame dressing.
* Make your cooking time shorter, by putting all vegetables in one pot, and
removing them according to the cooking time of each kind.
Finally, a difficulty in adding dressing to a dish is removing as much moisture
as possible, and adding the dressing itself just before serving. Dishes that
are full of water become really messy. Add the sesame dressing little by little
to taste, to adjust the proper amount.
